Carrot and Sweet Potato Soup


I n g r e d i  e n t s:
5 Peeled and Chopped Carrots
1 Peeled and Chopped Sweet Potato
1 Chopped Onion
3 Cloves of Garlic (less if you plan to kiss someone)
1 Large tbs of Cashew Butter
1 cup of Unsweetened Almond Milk
Sprinkle of Tumeric
Sprinkle of Cumin
Vegetable Stock Cube
Handful of Fresh Parsley
Handful of Fresh Basil
Pepper
Coconut Oil (or heat proof fat of your choice (i.e. Ghee))
Water

G a r n i s h: 
Edamame Beans
Basil

D o:
1) In a large saucepan, fry your onions and garlic, Carrot and Sweet Potato with a knob of coconut oil and tbs of cashew butter.

2) Once the onion and garlic is translucent add sufficient water to cover the vegetables. Leave to boil for a while (maybe 10 minutes). 

3) Add your stock cube. Make sure it is all crumbled up- you do not want lumps of salty stock. Add your cup of unsweetened almond milk. 

4) Sprinkle in a touch of Tumeric.  This is a powerful flavour so you do not want too much. Then sprinkle in a touch of ground cumin.  I like cumin so I put quite a generous shake, but this is up to you. Grind some pepper into your chunky soup. Add your handful of chopped parsley and basil. Add more water if necessary. 

5) Leave your soup to boil lightly until your carrot and sweet potato are quite soft. 

6) Pulverise your soup using a blender or hand whizzer.  (I used a hand whizzer).

7) Serve your soup in a bowl. Garnish with whatever you like. A boiled egg would be nice.  I had edamame beans and basil. Enjoy!


N u t r i t i o n: 
This soup is extremely delicious, but also very healthy.  The soup is loaded with vitamin C and antioxidants (note the bright orange beta-carotenes) which will do wonders for your skin and imune system. Tumeric is also known to be one of the best super foods you can eat. Vegan Apple and Oat Tartlets: Green Kitchen Stories



Even if you're not into cooking or food,  I really think you will enjoy watching this video.  The production is so cute and simple.  It is from one of my favourite foodie blogs Green Kitchen Stories.  These little tartlets are vegan and also made from healthier ingredients than the usual tart (such as coconut oil and oats rather than refined flour and cholesterol buggering butter).  If I was to host a dinner party where I was seriously trying to impress, I would give these little babies a go.

My New Roots Spring Samosa's



My New Roots is my favourite food blog.  Sarah Britton (the blogger) not only gives you delicious recipes, gorgeous photos and inspiration for dinner, she teaches you about the food you are eating.  Sarah Britton is a top nutritionist and has the knowledge and know-how of how to use food to feel great and (most importantly) be healthy.  I think another thing I admire about Sarah is how she writes; she makes healthy eating sound so exciting, fun and accessible.  You can feel her passion for food through her words.  




This morning I was sent another beautiful recipe from Sarah: 'Fully-loaded Spring Samosa's with Sweet 'n Sour Chutney'. The Samosa's sound delicious and are also vegan and gluten-free.  I can't say I live a vegan life-style (I'm an egg and yoghurt monster) but I do believe that us humans should avoid gluten if we can. I can't wait to try this ol' recipe out. They would be perfect for a afternoon summer snack- or whenever really. I would like to try them with a large bowl of Raitia (that yoghurt-y mint dip).  Here is the recipe on My New Roots.

Figgy and Sprout: Raw Almond Yoghurt


Figgy and Sprout is one of those enviable foodie blogs with a 'clean' design, gorgeous photography and lovely, educational and inspiring words.  Hats off to Katie who is the blogger behind this website as there are plenty a healthy recipe that I am running to the kitchen to try out-  if only I had one of those beautiful kitchens with dark wood, cute plates and convenient lighting. 

This recipe caught my eye as I am an absolute yoghurt obsessive, health freak and lover of Almonds. I bring to you Figgy and Sprouts

This recipe is Vegan friendly and gluten free.
