Recipe: A Creamy Crunchy Avocado Parsley Salad


This is the best.  So easy to make, and super healthy.

I n g r e d i e n t s

s a l a d:
1 avocado (ripe)
150g sweetcorn
1 celery (with lots of sticks)
One large handful of parsley

d r e s s i n g
2 tbs of cold pressed rape seed oil
1 tbs dijon mustard
Garlic (granules, squeezy, or fresh- fresh will be potent thought)
juice of 1 juicy lemon
salt
lemon pepper
tbs of garlic-y humus
6 chopped small pickled onions
2 tsp of pickled onion vinegar


D o: 

1) Chop everything up into a large bowl; 
a) Slice avo in half and dice both sides. Squidge out any of the lovely darker green avo in the mixing bowl (this mixes with the dressing and makes it more creamy).
b) Slice the celery sticks. 
c) Chop the parsley (the smaller the better).  Parsley is quite a strong herb so a large leaf of it isn't always the best. 
d) Whack your sweetcorn in the bowl too. 

2) Chop your small pickled onions into little tiny pieces and put in a smaller bowl. 

3) Add other dressing ingredients with your shallots and stir.  Add more of any of the ingredients to your taste and stir again. 

4) Pour dressing over salad and mix well.

5) Serve immediately

L e m o n:
 Lemon is the best fruit of vegetable that can alkalise your stomach.  This is a good thing as the majority of us eat food that metabolise into acid in our stomach: sugar beng highly acidic. Read more about that here

This herby herb is extremely good for you. It is high in Vitmins: in particular C and K.  Vitamin C helping with your immune system, the quality of your skin and your energy levels. Vitamin K helping your nervous system and warding off heart disease and heart related issues.  Two tablespoons of parsley contain 150% of your daily recommended intake of Vitamin K. We have all heard how amazing garlic is.  How it is anti fungal, anti-inflammatory, how it is high in all nutrients, thins your blood, wards off all colds, improves cholesterol and your heart health, so do I need to say any more?  If I do, please read here.

M u s t a r d:
Like chillie, the spicy kick in mustard will not only taste great and clear your nostrils, it will also sped up your metabolism. Ker-ching! 

R a p e   S e e d   O i l
Get it out of your head that fats are bad for you- they are good good good.  But they have such a bad wrap and the reason why is becasue we are not educated enough about them.  Rape Seed Oil is bright yellow, so flavoursome and very good for you.  It is very high in your omega 3s, 6s, and 9s, has 50% less saturated fats that olive oil and is high in vitamin E which among other things does wonders for your skin, eyes and hair.  Rape Seed Oil is great over salads and will provide you with these great benefits, but do not cook with it on heat as its smoke point is low. With a low smoke point, your oil will burn quickly and turn your healthy unsaturated, mono saturated fats into unhealthy fats. Read more about Rape Seed Oil here.
